Prep Time: 40 minutes
2 medium whole sweet potatoes
1 tablespoon olive oil
Preheat oven to 400°
Peel sweet potatoes, cut each end, then cut in half crosswise. With the half, slice in 1/2 inch sections lengthwise. Still keeping the potato together, quarter turn it and cut in 1/2 inch sections lengthwise to produce columns or sticks. Repeat with other sections.
Place columns on baking sheet and drizzle with olive oil, then salt and pepper to taste. With your hands, spread oil and seasonings to every surface of sticks. Place baking sheet in oven for 20 minutes, turning baking sheet after 10 minutes.
