Chicken Tacos With Broccoli Slaw And Mild Tomato Salsa, Rice And Beans

ingredients for 4 servings

1# naturally raised hormone and antibiotic free boneless and skinless thighs
4 oz face zero greek non-fat yogurt
2 cups loosely packed broccoli stems and tiny flowerettes (peeled strips from the stem with a vegetable peeler)(blanch the flowerettes in boiling water for 30 seconds, chill in ice water, drain)
1 cup shredded cabbage
4 scallions sliced thinly
1/3 cup lime juice
2 tsp palm sugar
8 corn tortillas
1 cup cilantro leaves
3/4 cup loosely packed grated queso fresco
1.5 cups cooked black beans drained
1.5 cups cooked brown rice
.5 onion julienne
2 tbl tomato paste
1/4 tsp ground cumin
1/4 tsp ground coriander
2 oz olive oil

1 cup ripe diced plum tomatoes
1/4 cup diced onion
2 tsp minced garlic
1/4 tsp ground coriander seed
1 tbl red wine vinegar

For the salsa
1.saute the onion add the garlic and tomato, cook for three to five minutes
2. add the spices, cook another minute and then cool
3. puree in a blender and season with salt and pepper to taste
For the tacos
1. combine the broccoli, cabbage, lime juice and sugar, mix well and season with salt to taste, add the scallions just before serving
2. saute the onions in a large pan, add the tomato paste, rice, beans and spices, mix well, reserve warm
3. dice the chicken into bite size pieces and poach in lightly salted water
4. Warm the tortillas in the oven, place two on each plate, top with the slaw, chicken, salsa, grated cheese and cilantro leaves
5. serve with the rice & beans on the side
