This slaw is great with different apples throughout the year but in the early summer when the local apples hit the farmers market they are tart and perfect for slaw.
8 oz. DaBeccaTurkey Breast
½ cup rice wine vinegar
¼ cup honey
1 Tablespoon grain mustard
1 Tablespoon fresh lemon juice
3 early summer apples (Lohi or other apples)
1 cup finely chopped baby bok choy
1 cup finely chopped celery
¼ cup thin 1inch long strips of carrots
2 tablespoons fresh Italian parsley rough chopped (optional)
Fresh ground black pepper
1 head Bib Lettuce
1. In a medium size bowl use a whisk to mix the rice wine vinegar, honey, grain mustard, and fresh lemon juice together. Set aside.
2. Cut the apples into thin slices. Disgard the core. Add the bok choy, celery, carrots, and parsley together. Season with salt and pepper. Add the vinaigrette and diced turkey and mix well. Serve immediately on top of bib lettuce leafs.
All of this can be prepared in advanced simply cut the apples and mix in the vinaigrette at the last minute.
